Tahini Couscous with Vegetables

2 cups water
2 1/2 tablespoons tahini
2 cloves garlic, pulverized
1 baby zucchini halved lengthwise, then sliced
2 stalks celery, sliced thin
4 to 5 large crimini mushrooms
1/4 cup finely chopped green onion
1 cup couscous
1 tablespoons lemon juice

Bring first 5 ingredients to a boil in a medium saucepan, lower heat, to a high simmer for about 3 to 4 minutes. Add mushrooms and green onion, and simmer for another 2 minutes. Add couscous and lemon juice, stir constantly for 1 minute, remove from heat and cover. Let stand for 10 to 15 minutes, fluff with fork and mix well, and serve. Stands well on its own as a full dinner, or as a side dish. Serves 4.
