Soft Cheese Substitute from Soya Flour

1 cup soya flour
32 ounces water
1 teaspoon guar gum
1 pinch sea salt
4 tablespoons nutritional yeast
1 half small onion or a few cloves of fresh garlic for flavor, optional
1/3 cup soya oil

Any herb or other natural seasoning can be added for flavor and color. Boil flour and water for 25 minutes. Strain mixture. Yield 2 cups. Put remaining liquid and all other dry ingredients in blender and liquify. Add oil until consistency of stiff cream is achieved. This alternative bakes well in and on pies, cooks great in sauces or is simply cheesy on bread or grains, add lightly to cold veggies or salads. Sprinkle with toasted wheat germ or sesame seeds for added crunch. Yields 2 cups.
