1/2 to 1 cup warm cooked quinoa
2 toasted, torn up corn tortillas
1/2 cup cooked black beans
1 chopped tomato
2 handfuls salad mix; baby greens mix with nutty tasting greens works best
Italian salad dressing
Put all but dressing on a plate. Pour enough dressing to flavor, but not coat ingredients over all. Toss and serve. Serves 1.
