Pole Beans and Sesame Seeds
1 teaspoon sesame seeds
1 pound pole beans, ends trimmed
1/2 teaspoon salt
2 tablespoons olive oil
1/4 freshly ground pepper
Bring 1/2 inch of water to a boil in a sauce pan. Add salt. Add the washed pole beans. Bring to a second boil and cook uncovered for 5 minutes. Cover and cook for another 5 minutes. Remove the beans and place to the side. Drain the excess water. Add to the sauce pan the olive oil, sesame seeds and pepper. Cook until the sesame seeds become a golden brown. Be careful not to overcook the sesame. Add the toasted sesame over the cooked beans. Serves 8.
