Miso Soup

4 cups water or 4 cups veggie broth
1 cube veggie bouillon, if using water
2/3 cup miso, use your favorite
1 stalk lemon grass
1 large piece ginger
1 bunch green onions
1 package tofu, your preference, firm holds its shape better

If using water, heat water before adding lemon grass. Bring water and lemon grass or broth to slow simmer, add miso and whisk to combine. Peel ginger and mince. Peel tough outer leaves of lemon grass, cut into one inch lengths and then slice into thin strips. Add both to the broth, cover and let simmer for at least 30 minutes. About 10 minutes before serving, cube tofu and add to the soup. Slice the green onions on the diagonal very thinly, and sprinkle on just before serving. This soup a great easy, elegant dish. Serves 4 to 8.
