Couscous Bean Salad

1/2 cup whole wheat couscous
3/4 cup water
1/2 tsp. vegetarian bouillon or salt
2 cups rinsed drained canned chickpeas or black beans or a mix
3 to 4 tablespoons Italian style salad dressing
1 sweet pepper, any color chopped
1 cup green or yellow beans
1 tomato, diced
salt and pepper to taste

Cook the couscous according to package directions adding the bouillon for flavor. Allow it to cool at least partially. Add the chickpeas, salad dressing, peppers, beans, tomato and salt and pepper to taste. This makes a great lunch. Makes about 2 meal sized servings.
